Cappuccino Slices – Recipe!

These are one of my favourite recipes, they’re so easy and quick but also look and taste delicious. You can do whatever you like with the topping. I like doing zig-zag coffee icing, grated white chocolate and finished off with a coffee bean, but mixed dark and white chocolate curls on top of icing also looks good. I also prefer to break up chocolate into chunks for the filling instead of buying chocolate chips, but if you’d prefer less chocolate (although I don’t know many who would :P) then chocolate chips will work also!  Hope you enjoy these yummy coffee treats 😀

Cappuccino Slices

Makes 9 slices

You will need a 20×30 cm/8×12 inch baking tin, greased and lined

Ingredients

200g/7oz light brown sugar

175g/6oz butter

3 tablespoons instant coffee granules

2 eggs, beaten

1 tsp vanilla extract

250g/9oz gluten free plain flour

1 and 1/2 tsp gluten free baking powder

3/4 tsp xantham gum

200g/7oz white chocolate, broken into chunks

To decorate

110g/4oz icing sugar

white and dark chocolate shavings

chocolate covered coffee beans

Method

1. Preheat the oven to 170C (325F).

2. Melt the brown sugar and butter in a saucepan on a low heat, stirring constantly. In a small bowl, dissolve the coffee granules in 1 and 1/2 tablespoons of boiling water. Stir two thirds into the pan and save the rest for the icing. Remove from the heat, transfer the mixture into a large bowl and leave to cool.

3. Once cool, stir the eggs and the vanilla extract into the bowl with a wooden spoon until smooth. Sift the flour, baking powder and xantham gum into the bowl and fold until well mixed. Then fold in the chocolate chunks.

4. Pour the mixture into the baking tin, level with a spatula and bake on the middle shelf of the oven for 25-35 minutes, until set in the middle and the top has formed a crust. Remove from the oven and leave to cool completely in the tin.

5. Once completely cool, remove the cake from the tin. Make up the icing by mixing the rest of the dissolved coffee with the icing sugar and zig-zag or spread across the cake. Grate some chocolate and sprinkle on the top of the cake, then cut the cake into 9 slices and top each slice with a chocolate coffee bean.

In other news I am frantically trying to sort my stuff out for the Shrewsbury Food Festival in a few weeks time, I’ve made 8 different lists today of all the different things I need to think about, make and bake! Still, I’m hoping my advanced planning will pay off and my stall will be a success!

An update, news… and cakes.

Well I’m ashamed to say my last post was Christmas… I definitely have some catching up to do! What have I been up to? Well, aside from making and creating new exciting recipes, I’ve also been making plans for the summer. I don’t know why but summer just seems to be the perfect time to do new things and expand the business. I’ve decided to get my foot in the door on the whole summer food festival craze, and I’m very excited to announce that I have been accepted for a bursary stall at the Shrewsbury Food Festival 😀 I’ve never done anything so big before so I’m nervous but also very very excited! Any local readers please come and say hi!

I was also asked to make some Valentine’s truffles for a special Valentine’s screening at the Old Market Hall cinema/cafe and was quite proud of the end product, I loved getting my creative side out and doing all the packaging…

Christmas and New Year Baking

Christmas is my absolute favourite time of the year. I love everything about it and, especially in recent years, one of the things that I get most excited about is deciding what Christmasy things I’m going to bake to enjoy throughout the festive period and into the New Year. This year has been particularly fun as I have been baking not only for myself and family, but also for selling at the cafes – something which has made Christmas even more exciting knowing that all sorts of people will be enjoying my homemade gluten free mince pies etc! So I thought I would give you a little sample of some of the festive treats that have been leaving our kitchen in the last few weeks…

So as you can see I’ve been very busy doing what I love and am sad Christmas and all its wonderful treats is over… however a New Year means lots of new and exciting gluten free bakes so I best get going… !

Udis Gluten Free Bread Review

I mentioned in my last post that I might do a review on a gluten free product and since then I have been to the Allergy and Freefrom show in Liverpool which was amazing. I came back with so many gluten free treats which I had never even seen in the shops…

… The most exciting thing by far had to be the gluten free donuts by Feel Free (this was my first time trying a donut and they didn’t disappoint). However the thing that I am going to talk today about is the Udis Tiger Bloomer bread:

This bread is undoubtedly the best gluten free bread on the market at the moment. It reminds me of homemade bread and it actually tastes just like the bread my mum used to make for me when I was little (back when gluten free was almost unheard of and the only way you could eat bread was to make it yourself). I love the fact that its not sliced so you can cut big, thick chunks off yourself which also means that you get a decent sized sandwich instead of tiny thin ones that I had got used to over the years.  It was so nice that I didn’t even want anything other than butter with it, the texture and flavour were that good.

Plus, it didn’t crumble and it lasted for ages! Fellow coeliacs will understand what joy it is to find a gluten free product that doesn’t fall apart in your hands when you eat it. I would recommend this bread to any coeliac who is fed up of dry, tasteless, boring bread… this is a real treat.

And just to finish off I thought I’d share these photos of me when I was little eating my favorite cherry cake – it was my favorite then and it still is now! I think you can tell by these pictures that I’d grow up to be a cakeaholic :p

Strawberry Shortbread Sandwiches

I’ve never really got into the whole vintage/retro baking but I love these…

How cute?! And they even taste as good as they look! They were originally meant to be whole round sandwiches but they were so huge I had to cut them in half. Then stuffed with strawberry jam and smothered in glace icing… they are so yum. I can just imagine them being served at a retro tea party or something.

So there’s a little sneak preview of some bakes that have been going on. Sorry for the short post today and also the lack of posts in general recently, things have been very busy but I’ll try to update more than I have been lately! On an exciting note, I am off to the Allergy and Free From Show in Liverpool this weekend so I’ll be sure to take lots of pictures and no doubt come back with a mountain of gluten free goodies to stuff my face with! I feel an review coming on maybe? Watch this space.

Autumn Bakes

Life has been busy lately for Hannah’s Gluten Free Goodies but I’m slowly starting to get into a routine now of doing my weekly orders and deliveries, I’m even getting faster at baking the cakes – the other day I managed to do two cakes in half an hour (with a little help from my wonderful helper). Pretty good I think! Anyway… summer is coming to an end but I actually love the autumn months and the food that goes with them, particularly when I can use so much of the seasonal produce in my bakes. We have what seems to be an endless supply of blackberries in our garden which have gone into blackberry and apple crumbles and blackberry and apple jelly! Next up is a blackberry and apple cake I think 😉

Anyway, the cakes I wanted to introduce you to today are these yummy things…

… Apricot Crumble Muffins – so delicious! These are probably the biggest muffins I’ve made (they look bigger in real life). Usually gluten free muffins only rise a little so you’re left with what looks more like a fairy cake, but these came up pretty big and even slightly resembled a normal looking muffin 😛 What’s more they have this amazing crumble topping which is actually made just like you would a normal crumble. And they don’t just have apricots in… they’re stuffed with chocolate chips too.

I think I’ll be making these all throughout autumn and winter because they are classic warming comfort food and delicious at any time of the day.

Ellesmere Carnival

Last Saturday I took my goodies to Ellesmere Carnival… I thought I was well prepared, and I was, apart from the small fact that I didn’t realise you had to bring your own table and tent. So there we were with a whole load of cakes but nothing to display them on and nothing to shelter us from the rain! However, it was not a lost cause… they managed to find us a table and put us in the beer tent! Note to self – always read information properly and never ‘just assume’ that everything will be okay!

Anyway, we managed to get everything set up and sorted, the only downside was that we weren’t in with all the other stalls so had quite a few hours of waiting for people to come and find the beer tent… which wasn’t until around 2 o clock :p However, I can’t complain as it was completely my own fault!

Things soon started to get busy though and I managed to sell most of my cakes by the end so it all turned out okay. I also had brought with me a few new goodies such as coffee cake, white chocolate and coconut blondies and popcorn lollipops (very popular with the children!), aswell as the old favourites – chocolate and butterscotch brownies and cherry and coconut slice.

Apart from that I have just been getting on with my usual orders and trying out a few new recipes to take with me to the Oswestry Farmers Market on Friday. Fingers crossed the rain stops!

Gluten and Dairy Free Lemon Drizzle Cake – Recipe!

Recipe time! I’ve had a few requests for this recipe so here it is – you can make it either just gluten free or gluten and dairy free, you just use different butters depending on what you want. I also do various decorations for this cake, the first time I did it for a friends birthday so I crystallised some edible flowers for decoration… but you can really do whatever you fancy. Grated lemon rind sprinkled over the top always makes for a pretty cake, and recently I used little sugared lemons and dotted them around the outside of the cake… just be creative & enjoy!

Gluten and Dairy Free Lemon Drizzle Cake

Makes one round 7 inch cake, serves 8-10. 

Oven temperature – 180C/160C fan/350F/gas mark 4

Ingredients

225g/8oz gluten-free self raising flour

1tsp gluten-free baking powder

3/4 tsp of xanthan gum

225g/8oz soft butter/margarine (if you want to make it dairy free then just use dairy free butter, I used the Pure Sunflower dairy free butter and it worked well)

225g/8oz caster sugar

4 medium free-range eggs

Juice and rind of half a lemon (I always use a bit more because I like my cake to be very moist and lemony)

Icing:

110g/4oz icing sugar, sifted

Juice and rind of half a lemon (the rind is for decoration if this is what you choose to do)

Method 

1. Cream together butter and sugar until light and fluffy. Add eggs a little at a time, beating well after each addition.

2. In a different bowl, sieve together the flour, baking powder and xanthan gum. Fold in the creamed mixture using a metal spoon. Add the juice and rind of half a lemon (or more).

3. Pour the mixture into the prepared tin lined with grease proof baking paper. Bake for 50-60 minutes or until golden brown and springs back when touched.

4. Once you have taken it out of the oven, leave it in the tin for 15-20 minutes until it has cooled slightly. Then remove from the tin, peal off paper and leave to cool completely on a wire rack.

5. Once the cake is completely cool, mix the sifted icing sugar with the lemon juice. The icing should coat the back of the spoon, if it is too stiff it won’t run down the sides of the cake.

6. Pour icing over the top of the cake and allow to run down the sides. Sprinkle with the lemon zest or whatever other decoration you fancy.

An Update on Hannah’s Gluten-Free Goodies

The reason I’ve been so quiet lately is because things have suddenly got very busy for Hannah’s Gluten-Free Goodies! Last Saturday I was at Philpotts in Shrewsbury for the day handing out lots of free tasters of my cakes – people certainly love free cake whether it’s gluten-free or not! The feedback and comments that I got from people were really lovely, not to mention the fun and friendly staff at Philpotts – thank you for having me!
